BBQ Chicken Tacos with Pineapple Slaw

Why not put a spin on the classic taco! Using Rotisserie chicken and your favorite BBQ sauce you can have these tacos on the table in no time. The Pineapple slaw adds a refreshing touch tying it all together. The best part is they are easy to make. Pretty healthy and full of flavors.

Want to save a few calories you can eat this with just the bbq chicken and pineapple slaw.

Kid tip: If kids are not big on the flavors. Just put bbq chicken on a bun for them and they can have a sandwich. I just told our boys it was shredded chicken sandwich and left out the words BBQ. One ate it without any questions. The other after he chatted the whole dinner time finally ate 3/4 of his sandwich. I’m saying kid approved!

Ingredients:

Chicken –

  • Rotisserie Chicken, shredded
  • 1/4 cup Sweet baby rays honey bbq sauce
  • 2 tsp brown sugar
  • 1/2 cup pineapple juice (used canned pineapple chucks and reserved the juice from the can)

Pineapple slaw –

  • 3 cups Shredded cabbage w/ carrots
  • 1 tablespoon cilantro, chopped
  • 1/2 cups pineapple chunks, choppped
  • 1 green onion, diced
  • Pinch of salt
  • 1/4 cup sour cream
  • Juice from 1/2 lime

Rice –

  • 1 cup rice
  • Juice from 1/2 lime

Additional ingredients –

  • Fajita size taco shells
  • Shredded Monterey Jack Cheese

Directions:

  1. Cook rice according to directions. When rice is finished cooking add 1/2 lime for flavor.
  2. Mix all ingredients for pineapple slaw and set aside.
  3. Shredded Rotisserie chicken, add to skillet on medium heat. Cook for 3-5 minutes. Adding in pineapple juice and brown sugar. Continue to cook for additional 2 minutes. Add bbq sauce and warm through.
  4. Warm tortilla shells.

Assembly:

  1. Fill tortillas with shredded cheese, bbq chicken, and pineapple slaw.
  2. Enjoy!
